This side-dish is so healthy, it almost doesn’t belong on OntheFly…
[Prep: 5min / Cook: 20min]
Ingredients– 1/2 cup uncooked brown rice
– 1/2 cup uncooked white rice
– 1 cup apple juice
– half a chicken stock cube
– 1/2 an onion
– 1 or 2 celery ribs
– about 1 cup of walnuts
– 1 apple
– 1 tsp. ground cinnamon
- Mix the uncooked rice together in a saucepan with the apple juice, chicken stock cube and 1 cup of water. Bring to a boil and let simmer unter water is absorbed and rice is fully cooked (about 15 min).
- Chop the onion, celery and walnuts. Core and chop the apple.
- Heat a large frying pan or wok over high heat and coat the pan with a small bit of olive oil or butter. Add the onions and celery and saute until softened.
- Add the cooked rice, walnuts and apple. Coat with cinnamon, mix well and heat for about a minute or two more.
- Ready to eat!

Notes- The apples in this dish don’t taste so great the next day, so if you’re planning for left-overs, maybe leave the apples out or pack the whole mixture with the apples separate.
- The mixture of brown and white rice is a key part of the texture and flavor of this dish, but it would also go quite well with wild rice.

Hi- thanks for trying to follow! I’m not extremely tech-savvy, but I would guess that it’s a problem because http://www.ontheflyrecipes.com is currently set to re-route to the original blogger site.
