Hmm, yeah. No special notes on this one. I had no recipe and just bought a bunch of stuff at the grocery store with some sort of random vision and this is what happened. I was pleased. Hope you will be too. You can eat this right away (with the pasta still a little warm) or after chilling for awhile- both are good. Oh, and add olives…I just don’t like them myself.
[Prep: 10min / Cook: 20min]
Ingredients– about 8oz/200g cheese-filled spinach tortellini
– about 200g cooked, cubed ham
– 100-200g feta cheese (also cubed)
– 1 bell pepper
– 1 small red onion
– 1 medium cucumber
– a smattering of pine nuts
– prepared Caesar dressing
- Boil tortellini according to package directions.
- Meanwhile, chop the veggies.
- Drain and rinse the pasta with cool water.
- Toss pasta, veggies, ham, cheese & pine nuts with a drizzle of Caesar dressing in a large bowl.
- Ready to eat!
