So, I realize this is probably a bit late for everyone (sorry, been out of town), but hopefully it will come in handy next year or after your Christmas turkey… Anyway, here’s one way to make a bit more ‘divine’ leftover turkey sandwich.
[Prep: 15min / Cook: –]
Ingredients– about 2 cup-fulls / .5lbs / 200g leftover turkey
– 1/4 cup pecans
– 1 apple
– 1/4 cup of mayonaise
– a couple slices of Swiss cheese
– cranberry sauce
– dash of salt & pepper
– 4 medium bread rolls
- Preheat oven to 350F/175C, cube or shred the turkey and chop the apple & pecans.
- In a large bowl, combine turkey, apple, pecans, mayonaise, salt & pepper. Stir until coated and add extra mayonaise as desired.
- Slice open the bread rolls and layer evenly with the turkey salad. Top each with a couple dollops of cranberry sauce and a slice of cheese.
- Place open-faced in oven for about 5min or until cheese is melted and sandwich is lightly warmed.
- Ready to eat!
[Serves 2 @ 2 sandwiches each]
Variations- This happens to be what was left of my turkey-day feast, but your leftovers will likely vary. The apple gives a key crunch to the sandwich, but other additions/substitutions could be celery, onions or shredded carrots- just to name a few. See what extra ingredients & leftovers you have and experiment a bit!
